Walnut is usually far too pricey for a bench, and not so heavy. I'd lean more towards the oak for at least the base, then, if you can, use maple for the top. red oak and walnut are not very stiff, and you need a stiff wood for the top. If it's white oak, it would be stiff enough for a top. You should pick up Christopher Schwarz's book on Workbenches.
